Pretty sure I don’t have to carry on and on about how much I adore food………especially Italian. Pasta, marinara, Alfredo, crisp salad, good wine and my favorite Tiramisu – are among faves.
Italian food is always a pleaser. Regardless of if it’s just for the family or hosting a gathering, who doesn’t love al dente pasta, a rich sauce or a delicious pizza?
I’m ready to dive in, just thinking about it! No wonder, I’m all over the Italian Days – Taste the Tradition event at Publix®!

Since I’m double-duty on homework this week (5 classes and counting till just dissertation) trying to put another term behind me, I have been craving a sweet pick me up Italian dessert treat. Tiramisu is my far my favorite and just what my fun-deprived-study-laden-self needed.
If you don’t already know, Tiramisu is a creamy Italian custard dessert, which in the right hands can be nothing short of simply amazing – my hands are however do not have that magic so I go with a cheaters variety.
Cheater’s Tiramisu
2pkg. (3 oz. each) soft ladyfingers, split, divided
1/2cup freshly brewed strong Coffee
1/4cup sugar, divided
2tsp. vanilla or rum, divided (I use homemade vanilla but store bought is fine)
1container (15 oz.) Ricotta Cheese (can substitute cream cheese but will be more dense)
3cups thawed Whipped Topping
2tsp. unsweetened cocoa powder
Directions
Arrange half the ladyfingers on bottom of a 12x8-inch dish (I use a glass dish coated with cooking spray). Mix coffee, 2 Tbsp. sugar and 1 tsp. vanilla; brush half over ladyfingers in dish.
Beat the ricotta cheese, remaining sugar and remaining vanilla with mixer until well combined. Whisk in whipped topping.
Spoon in half the ricotta mixture over the top of the ladyfingers in dish; then layer the last half of the ladyfingers over the top. Brush with remaining coffee mixture; top with remaining ricotta cheese mixture. Sift cocoa over top of dessert. Refrigerate several hours or until chilled.
